Here is a list of common words that may be found when perusing message boards, raw food sites, or raw food literature.

Bad fats

"Bad fats" are fats which are commonly found in certain foods- cooked foods, junk foods, and fast foods- which may accumulate a harmful affect on the human body.




Commercial

When the term commercial is used, it is usually referring to food that has been grown for the purposes of being sold on a large scale.  Fruit grown commercially, for example, is usually grown in large fields, and sprayed with pesticides.  Commercially grown produce is often viewed as not containing as much care, as organic produce, towards neither the well being of the environment nor the health of individuals.



Dehydrator
A dehydrator is an appliance which dries fresh foods by slowly taking out the water content.  Dehydrating leaves the food with a more intense flavor.  Dehydrating is a process similar to cooking.  The difference between cooking and dehydrating is that cooking destroys nutrients, whereas dehydrating, has been asserted as keeping enzymes and nutrients intact.  In addition to enhancing the taste of raw foods, dehydration also prolongs the shelf life of food, allowing you to keep it longer once it is dried.

Detoxification


Detoxification, or "detox" is the term used to describe the cleansing process that the body undergoes to rid itself of toxins. 


Excalibur

Excalibur is the name of a company which makes a high quality dehydrator.


Fasting

Fasting is the process of abstaining from solid food for a certain period of time in order to experience physical rejuvenation.


Food Processor

A food processor is an accessory which shreds vegetables and fruit.  Rather than hand cutting bell peppers to put in your dehydrator or salad, you can simply put them into a food processor and it will slice them for you.


Fresh fruit

Fresh fruit refers to fruit which has not been cooked or processed in any way.  It is in the condition that it grew in from nature.



Good fat

"Good fats" are fats found in foods such as avocadoes, olives, coconuts and nuts, which do not harm us by raising blood pressure, or cholesterol, and do not cause obesity when eaten.


Green Smoothie

A green smoothie is a smoothie made with fruit and leafy greens blended together.  For example, bananas and spinach blended together is an example of a green smoothie.  Yes, it actually taste good.




How raw are you?

As you continue to discover more about the raw foods diet, you will notice the question “How raw are you?”  This strange sounding question is actually in reference to how much raw food you eat on a daily basis.  Many people do not consume a completely raw diet, and therefore may eat 25% raw food daily, or 50% raw food daily.  Some eat between 75%-100% raw food every day.
 

In-shell nuts

The term "In-shell nuts" refer to nuts that are sold within their shells and have not undergone any processing or heating.



Juicer


A juicer is a kitchen appliance that squeezes the juice from fruits and vegetables.  When you put an apple into a juicer and you create apple juice.  When you put a carrot into a juicer you create carrot juice.



Living Foods

Both the term “raw food” and “living foods” refer to food which has been neither heated nor processed.  The term "living food," may also refer to a raw food which has additionally been sprouted.




Organic

Organic foods are foods that have been grown without any unnatural chemicals, or gone through any unnatural processing.  Organic soil is said to have more nutrients than soil of commercially grown fruits and vegetables.  Because the fruit is healthier, organic food is usually considered to be tastier and healthier for us.



Processed food

A processed food is a food that has undergone a process which changes it dramatically from its natural characteristics.  For example, sugar begins as sugar cane- a tuff stalk, which contains sweet yellowish juice inside.  After a process of cooking, and heavy refining, it becomes the white crystals that are sold in stores.  It no longer resembles its original characteristics in looks.  Nor does it resemble its original state in nutritional value.




SAD diet

The SAD diet stands for the Standard American Diet.  The Standard American Diet- or SAD diet, is the diet that most United States citizens eat.  It consists of fast food, junk food, cooked food, additives, soft drinks, candy, and processed food, and after all of that- a little bit of a fruit or a vegetable.  Unfortunately, a lot of health distresses are attributed to the SAD diet.


Sea Vegetables

Sea Vegetables, such as dulse, nori, spirulina and kelp, are seaweed which raw foodists eat because they are high in nutritional value.


Soaking nuts and seeds

Soaking nuts and seeds is a process of placing nuts or seeds, in water in order to awaken the sprouting process.



Sprouting

Sprouting is the process of bringing a seed into the first stages of growth.  For example, a bean is a seed in dormant.  Once it is soaked, it will begin to grow into a plant by developing a shoot and eventually leaves.  Sprouts are eaten when the bean first begins the process of growing into a plant.


Toxins

Toxins are any byproduct from food, which once it is digested, causes harmful or potentially harmful affects in our body.




Vitamix

Vitamix is a name that you will see floating around raw food message boards and literature.  Vitamix the name of a company who makes an extremely high quality blender, which many raw foodist use.  In the raw food arena, it is very important to have a high quality blender because a blender may eventually replace your stove.



Whole Foods

Whole foods are foods which are in a whole, natural state, and have not been adulterated, either by additives, chemicals, or processing of any kind (with the exception of cooking, if desired).  Some examples of whole foods include, fresh fruit, fresh vegetables, beans, brown rice, and oatmeal.



Wildcrafted

Wildcrafted herbs have been grown and harvested in the wild.  Herbs grown in the wild are found to have more medicinal content compared to cultivated herbs.   Therefore, some find it beneficial to purchase herbs that have been wildcrafted.
